Easy Buffalo Chicken Mini Meatloaf

Delicious and easy. I threw some leftover things I had in my fridge to make up this healthy dish! And I LOVE using the muffin pans for individual servings!


  • 1lb ground chicken
  • 1 egg
  • 1/4 cup breadcrumbs
  • 1/4 cup tablespoons buffalo hot sauce (I used Red Hot) (or to taste)
  • 2 stalks of celery, diced
  • 1/2 cup diced red peppers
  • 1/4 cup spinach drained (optional)
  • salt and pepper, to taste
  • blue cheese to top after cooking


  1. Preheat oven to 375 degrees.
  2. Place all ingredients in a bowl and use your hands to mix thoroughly.
  3. Plop mixture into a muffin tin.
  4. Bake for 25-30 or until chicken is completely cooked through. (170 degrees)
  5. Top with blue cheese
